Made bacon with a dry cure and smoked to an internal temperature of 15o with apple wood and hickory. You will never buy grocery store bacon again after eating this Berkshire bacon

Best pork belly I’ve ever had. Rolled in a porchetta treatment. Cooked sous vide for 36 hours. Deep fried to finish. Absurdly delicious and highly recommended!
