Most jerky of today isn’t truly "Jerky" as it has been known. Today’s makers sell from dried blood sheets they call jerky and up to thick spongy beef that dissolves like cotton candy. True, jerky is rather dry, 1/16" to 1/8" thick, comes in uneven sheets or strips, has good taste and is chewy and stringy. Good jerky cannot be broken in half easily with your teeth, it has to be torn with your hands. Getting the right flavor is key as is the right kind of moisture levels. Most of the stuff sold in packages at those convenience stores isn’t Jerky as it had been known so, to each their own but, the variations are endless which makes it very difficult to find the good stuff. Look’n good here.
